This month's theme ingredient is Nutella. Now, I am a vegan chef, and I don't use Nutella. At all. But guess what! You can make nutella vegan! All you need is a good chocolate and a nut butter.
It is easy. First, make the butter. All you need is your food processor, a 6 cup microwavable glass dish and a spoon. Choose the nut you like - actually, besides hazelnuts, cashews, almonds, peanuts of course....any nut works, and measure out 3 cups. Process about 15 minutes until creamy.
Take a quality dark chocolate chip and measure out 2 cups. Place in the glass dish in the microwave and heat 10 seconds at a time, stirring until smooth. Add the butter and stir. Viola- Nutella!
You can use it all at once if you have a baking project like I do, or you can refrigerate it for up to 2 weeks- just be sure to warm it up again before use.
