Last month I was asked to make a special dessert for a going away party - what I came up with was a nice cold tangy sweet sorbet served with chocolate lady fingers...the dessert was a smashing hit.
I happened to have some of that sorbet stashed away in the freezer and today was just the perfect day to bring it out and serve it up. Especially after a frustrating morning of car troubles. You ever have that sort of day? Well, if you love lemon and are a diehard raspberry fan, you will love this sorbet! It is really easy to make - no ice cream maker needed! The smoothness is due to the addition of booze - Limoncello. You will love this! Try it! (oh,yes and I will share the lady finger recipe when it cools down enough to start baking again)
Pour the squeezed lemon juice through a sieve to remove seeds.
Add 1/3 cup of limoncello to the juice. Combine the zest and the cooled sugar mixture with juice/limoncello mixture. Remove the tarragon sprigs
Stir to mix and chill mixture in ice bath for 3 hours (just pop in frig).
Pour the mixture into ice cream maker and freeze according to your manufacturer's instructions or place in the freezer 3 hours.
