Remember the commercial for Reese's Peanut Butter Cup?
This is a take off on that- all I did was open the frig yesterday and POW! I saw the peanut butter and another cupcake was born!
This one is a "killer"- sweet mini cuppies mixed with coffee and peanut butter, then hand dipped and covered in a cappuccino chocolate coating.

Peanut Butter Coffee Cupcakes
(or “You Got a Latte Coffee in My Peanut Butter!” Cuppies)
1 cup vegetable margarine
1 cup strong coffee
1/2 cup peanut butter
1/2 cup vegetable oil
Place above ingredients in medium size pan
and bring to boil over medium heat.
Take off stove and add the following:
2 cup cake flour
2 cup raw sugar
Egg Replacer for 2 eggs
1 tbsp. vanilla
1/2 cup soy creamer
1 tsp baking soda
Stir until well mixed.
½ cup peanut butter or peanut butter chips
Pour into lined muffin pans. Sprinkle with chips.
Bake at 350 degrees for 12 minutes.
Topping:
1 cup Cappuccino chips
2 tbsp Crisco
Melt in double boiler – dip cuppies and allow to harden.
Garnish with peanuts.
