Breakfast is the most important meal of the day, so why not start it with a vegan cupcake?
There is something about getting up and not wanting to cook breakfast during the summer months...the sunshine, warm weather, and I have got to head out the door and go beckens....thus in part, the S is For Strawberry Streusel Almond Cupcake was born. You can make thus the night before and eat them all week or enjoy for a party celebration!
Enjoy them warm, the almond cake and strawberry inside melts in your mouth! As one Flickr guest commented, "Y is for Yummy". Go ahead, make 'em tonight!
S is for Strawberry Streusel Almond Cupcake

Cake:
1 1/2 cups sifted all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
Replacer for1 egg
3/4 cup raw sugar
1/3 cup vegetable margarine
1/4 cup soy creamer
3 teaspoon almond extract
Strawberries
Dark Chocolate bits and shavings
Sliced Almonds
Streusel:
1/2 cup brown sugar
1/3 cup sifted cake flour
1/3 cup vegetable margarine, room temperature
1 teaspoon each cinnamon, nutmeg
¼ teaspoon cardamom
Streusel: In small mixing bowl, combine topping ingredients. Blend with fork until crumbly. Set aside.
Sift 1 1/2 cups sifted flour with baking powder and salt into a bowl. In a medium bowl, beat together egg replacer, 3/4 cup sugar and 1/3 cup margarine. Add creamer and almond. Stir in flour mixture and mix well.
Pour batter into lined muffin pans- fill halfway, layer with some chocolate bits, streusel,and a strawberry. Cover with more batter. Sprinkle topping crumb mixture over batter.
Bake at 375° for 20 to 25 minutes. Cool.
Decorate with almonds and more berry slices, and shaved chocolate.
Superb warm—but excellent anyway you wish!
