Today I am cleaning out the frig in preparation for our trip!
I saw a recipe in the WSJ a while back and it caught my eye. Homemade harissa - that is something I never tried making before --so earthy, hot and spicy...and then paired up with shiitake mushroom as a warm or cold salad...hmmm. I had herbs and cilantro in the frig, as well as a big beautiful red pepper...oh, and chilies too. My shiitakes were dried in the pantry so I soaked them in the leftover vegetable broth from the frig. The umami in my kitchen was screaming!
This is a really simple recipe - if you don't have fresh chilies for roasting you may use dried and grind them...or just use powdered. It is all good. Make the harissa then mix a little with a little EVOO and make a vinaigrette...saute the shiitakes and red bell pepper strips, mix with the dressing and serve over your fav greens. Delish. You know, this is what always amazes me. Folks go on and on about how they can't do vegan beause it is hard or every recipe out there capitalizes on the dairy and meat industry. Well, all I did was open up one newspaper (and also found it via the Internet) and found this superb gem...vegan recipes are everwhere guys! Especailly if you are afraid to make an exchange or veganize one...please don't be afraid to experiment! I added the red pepper and the sweetness in this salad just blossomed!
