For today's challenge I am talking about what I would eat if I were on a dream vacation. Well, I'd have to be on an island then, enjoying my down time. Warm sand under my toes, wind blowing through my hair...I'd definitely be eating a Tofu Poke Salad, that's for sure.
This salad is a take on a Hawaiian Ahi Poke Salad, but instead of tuna, I marinaded tofu...
1/4 cup minced onion
1/4 cup minced green onion
1 teaspoon minced fresh ginger
2 tablespoons lightly crumbled wakame seaweed
1 tablespoon ground roasted macadamia nuts
2 teaspoons sesame oil
1 1/2 teaspoons crushed red pepper flakes
Then I added every veggie under the sun and served it with an agave mustard dressing:
5 tablespoons agave syrup
3 tablespoons smooth Dijon mustard
2 tablespoons rice wine vinegar
This works with tahini dressing as well so go for it and start your own dream'n.
