Many of you may remember me as a vegan cupcake creator and baker and when I heard today's challenge was boozy I knew just what I was going to make.
7 7. 7-Up and Seagram's. A classic cocktail served with a lemon twist. In dessert form. Lemony white chocolate glaze. Sweet and tart and boozy. Hmmm.
1 and ¾ cups All-Purpose Flour
1 cup Raw Sugar
1 tsp Baking Soda
½ tsp Salt
1/2 cup Soy Milk (or other non-dairy milk)
1/2 cup 7 Up
2 tbsp Seagram's 7
⅓ cup Vegetable Oil
1 Tbsp Apple Cider Vinegar
Blend and pour into prepped cupcake lined pans. Bake 25 minutes at 350 degrees.
Meanwhile melt 1/2 cup of white chocolate - mix with 1/2 cup lemon juice. Drizzle over cooled cuppies. Garnish with lemon peel and cherry.
Makes a baker's dozen.
