It's Wednesday and why not? Lets do Chocolate.This can be a pudding, gelato or ice cream depending on how long you chill or freeze it.
And yes, I used my Vitamix.
1 cup (2) bananas, frozen, sliced
1 cup (12) pitted dates
1 cup coconut cream (skim the creamy top from 1 can coconut milk)
2 tbsp cocoa powder
1/4 tsp sea salt
1/4 tsp vanilla or almond extract
1/4 cup crushed toasted almonds
Blend all but the crushed almonds. Pour into glasses. Fold in the almonds or sprinkle on top. Place in frig or freezer. Serves 4.
