I don't eat dessert everyday. As a matter of fact, I actually seldom have dessert. But I do like something sweet now and again. When I was a struggling student trying to make ends meet I had a tried and true favorite.
Hot Cocoa.
Before Sweet and Sara, Before Dandies, before Trader Joes ... it was Hot Cocoa, plain and simple.
Recipe:
1/4 cup cocoa powder
1/4 cup raw sugar
1/8 teaspoon salt
3 cups non-dairy milk
1/2 teaspoon vanilla
Place all ingredients in pan and stir, bringing to a boil.
You can top with vegan marshmallows or whip 1/2 cup aquafaba, 1/4 tsp cream of tartar and 1 teaspoon together until you have formed soft peaks. Flavor with a little raw sugar and then place a dab on your cocoa.
As you see, I couldn't wait.
There's nothing like hot chocolate! I feel like this summer is dragging on forever, when all I want to do is enjoy soup, cocoa, and warm, snuggly clothes!
