Day Five: Inspiring Cookbooks. I love Wicked Healthy Cookbook. Dereck and Chad Sarno are the epitome of badass. They describe plant based food spot on. They cook like I cook. They create. Ahhh, but this isn't a book review. It's about how good their recipes are and how they inspire me to cook. Other than Miyoko's The Homemade Vegan Pantry, this is the condiment cookbook. Whoever dreamt of so many types of bacon? Steaks? Buddha bowls, bibimbap, and so so much more.
I love greens and I make this savory gravy that I love to put on most everything. I had a big batch of collard greens to cook so I sauce them with red onion,peppers and mushrooms. Then I made the seitan from Wicked Healthy and smothered it in their Texas Barbecue sauce. Outstanding.
Here is the recipe for my Savory Gravy:
16 ounce firm tofu
3/4 cup vegetable broth
1/4 cup tamari
1/4 cup canola oil
2 tbsp nutritional yeast
2 tsp raw sunflower seeds
2 cloves garlic
Juice of 1 lemon
1 tsp kelp powder
2 tbsp basil
1 tbsp chopped chives
Blend away in a Vitamix or the like. Serve hot or cold.
Now, get cooking!
