Here we are already, at week three! Welcome to budget week! Today we are eating out of our pantry. I do that all the time so this will be easy!
Let's start with breakfast! I have lots of staples- rolled oats, pistachios, maple syrup, spices, coconut and dried fruit. I feel a granola coming on...
Here is the Recipe:
3 cups rolled oats (not quick-cooking)
1 cup unsalted, shelled pistachios
1/4 cup vegan margarine, cut into pieces
1/3 cup maple syrup
1 teaspoon ground cardamom
1/2 teaspoon coarse salt
1/2 cup dried apricots, diced medium
1/4 cup shredded coconut
Preheat oven to 300 degrees F. Place oats and pistachios in a bowl.I n a small saucepan, combine Earth Balance, maple syrup, cardamom, and salt over medium medium flame and cook until margarine melts, about 2 minutes. Pour liquid mixture over oat mixture and toss until oats and nuts are completely coated. Transfer to a parchment-lined baking sheet and spread in an even layer. Bake until golden, 30 minutes or so, stirring every 10 minutes. Let cool completely on sheet on a wire rack, 20 minutes, then stir in apricots and coconut.
Enjoy.
How about lunch or dinner? One dish that satisfies is always pasta - toss with a little extra virgin olive oil, basil and nutritional yeast and you are all set!
And while I am at it, why not clean out and organize the pantry too! Have fun, who knows what you might find lurking in your pantry!
That granola sounds delicious! We usually make the Almond Joy granola from Minimalist Baker, but this one sounds very good too. We always have granola in warmer months and porridge when it gets colder, so we've hopefully still got a few more weeks to try this!
