One of the funniest shows on TV of all time is Seinfeld. Today I decided that the TV character I am going to cook for is George. After all, who can't feel sorry for him ...just a little bit. I remember one episode when he was fishing for rye bread....well what would he do with that loaf of of rye?
How about a juicy toasted rueben! A not the meaty kind - one with tasty red cabbage, vegan mayo and lettuce. So good! George would love that. My grandmother made this recipe for cabbage:
- 2 tablespoons vegan butter
- 5 cups shredded red cabbage
- 1 cup sliced green apples
- 1/3 cup apple cider vinegar
- 3 tablespoons water
- 1/4 cup raw sugar
- 2 1/4 teaspoons salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground cloves
- Place butter, cabbage, apples, and sugar into a large pot. Pour in the vinegar and water, and season with salt, pepper, and clove.
- Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer until the cabbage is tender, 1 1/2 to 2 hours.
It is the bomb! Enjoy!
