The first week of Vegan Mofo is about the Bake Off! I have always loved baking-- it is so mathematical after all. For many many years I took time off (vacation) at Christmas time. Just to bake. And man did I bake. 1000s of cookies, pies, breads to give as gifts. I loved it. Every birthday calls for a special cake, every Thanksgiving, a pumpkin pie. Easter I make specially decorated cakes and there are always cupcakes because nobody puts cupcake in a corner. Oh! And the savory dishes - casseroles, quiches, filled pastries, the list goes on and on.
Today is about the cookie. The cookie or test cake originated in Europe. The Dutch brought it over to the States in the 1600s. These test cakes were made to check the oven temperature before baking a cake. Obviously they became very popular, especially during lean years when sugar and flours were hard to come by. I have got to say, bar cookies are one of my favorites - who doesn't like a brownie or lemon bar? I have a yummy one to share with you today.
Black Forest Brownie Recipe:
3 tablespoon vegetable margarine
4 oz plain soy yogurt
1 cup raw sugar
Egg Replacer for 2 eggs
1/2 teaspoon almond extract
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
3/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
2/3 cup dried cherries
1/2 cup chocolate chips
Mix all ingredients but cherries together- batter will be somewhat stiff. Add cherries and spread in “greased” 9 x 9 pan; bake at 350 degrees for 30 minutes or until done. Cut when cooled. Makes 15 plus depending how you cut them.
Ice these with your favorite chocolate buttercream and decorate with cherry candied pecans.
Candied Pecans:
1 cup whole pecans
3 tsp raw sugar
1 tbsp cherry juice
Spread pecans on cookie sheet and drizzle with juice and sprinkle with sugar. Bake at 275 degrees for 8 minutes then cool.
