Today we tempt a villain back to the vegan side - away from the dark side. I had to choose as my choice Lord Voldemort. Iconic. From what I have heard, before he turned evil, he loved cabbage. Excellent! Methinks I will lure him back with my famous cabbage rolls! Avada Kedavra!
1 1/2 pound head cabbage
2 teaspoons salt
12 ounces veggie crumbles or shredded jackfruit
2 tbsp flax seed ground in 2 tbsp water
1/3 cup bread crumbs or cooked rice, quinoa or bulgar
1/2 teaspoon paprika
1/2 teaspoons salt
1/2 teaspoons oregano
Black pepper
1 cup veggie broth
1 cup tomato sauce
Core the cabbage and boil the head in water with 2 tsp salt until soft. Separate the leaves and pat dry.
Mix the filling - in a pan place a little olive oil and brown your "protein"with the herbs and spices. Add the bread crumbs, broth and flax seed. Mix well. Set aside the remaining liquid for the sauce.
Fill and roll up the cabbage leaves - place in an oven proof dish seam side down.
Mix the remaining sauce with the tomato sauce and pour over the rolls. Bake at 350 degrees for 40 minutes. Yields 10 rolls
